So here’s the thing with kid food allergies – I’m so thankful that we live in a day in age where there are endless alternatives for high allergen foods. But of course, I want my children to just be able to be carefree kids who indulge on any & every treat they can lay their eyes & hands on. But currently, that’s simply not the case. Until then, you better believe I spend my time researching kid classics, but just with a safe special twist for them and their individualized needs.
So here we are today – Vegan Rice Krispie Treats! Yay!
(Oh, and shall I even say no bake & only 4 ingredients!
You can tell by Bridget secretly sneaking every bite she can while helping me, in videos I posted on Instagram, these were a HUGE HIT! She got to feel like a regular kid. And that makes me feel like the happiest mom on Earth.
I hope these bring you just as much joy, laughs, entertainment & happy stomachs when you make them with your little ones 🥰
Ingredients:
•1/4 cup vegan butter (I use Earth Balance Buttery Spread)
•10oz vegan marshmallows (I used a 10oz bag of Jet-Puffed minis)
•1/2 tsp vanilla extract
•6 cups Rice Krispies
*you will also ideally need parchment paper too!
Directions:
•melt the butter in a pot on the stove & add the marshmallows
•stir constantly until the marshmallows are completely melted and then add the vanilla
•remove from heat and add in the Rice Krispies and stir until completely coated with the marshmallow mix
•pour into a sheet pan sprayed with vegan nonstick spray (Pam Extra Virgin Olive Oil spray is my favorite)
•place a sheet of parchment paper over the top and use your hands to press mixture down and spread evenly without getting your hands all sticky!! Make sure to flatten on the top & get it into every corner!
•remove parchment paper & place tray in fridge to set a few minutes
•cut into squares
•enjoy!!!
