I’m sharing with y’all our go-to healthy dessert! Yes, I don’t know if healthy & dessert are synonymous, BUT, I think it’s healthy. And I certainly think it’s healthier than basically every other dessert.
DOUBLE CHOCOLATE CHIP COOKIE
ingredients
1/2 cup old-fashioned rolled oats
1 cup whole-wheat pastry flour
2 tbs unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp salt
1/4 extra-light olive oil (or EVOO)
1/3 cup flaxseed meal
2 tbs organic turbinado sugar
2 egg whites
1.5 tsp vanilla extract
2 tbsp water
1 cup (6 oz) mini chocolate chips
directions
-Preheat oven to 350 degrees F. On a rimmed baking sheet, toast the oats until golden brown & crisp – – about 15 min.
-Meanwhile, in a medium bowl, combine the flour, cocoa powder, baking soda, and salt.
-In a large bowl, stir together the oil, flaxseed meal, turbinado sugar, egg whites, vanilla, and water until well combined. Fold in the flour mixture, oats, and chocolate chips.
-Create cookie size of your liking, and put on baking sheet. I coat the baking sheet with olive oil. Bake 10-12 minutes.
