This is the perfect summer salad! And surprise…it doesn’t even have lettuce. It’s super fresh, full of herbs, and packed with flavor.
Without further ado…
Summer Salad
Ingredients:
1 large cucumber
3 medium tomatoes
6 scallions
1 ripe avocado
1 yellow bell pepper
1/4 cup coarsely chopped fresh flat-leaf parsley
1/3 cup coarsely chopped fresh cilantro
2 large garlic cloves (minced)
2 lemons freshly squeezed
1/2 cup EVO
salt & pepper to taste
1/2 cup crumbled feta cheese
Directions
- Cut the cucumbers into quarters. Spread them on a paper towel and sprinkle with salt. Let stand until you are done mixing everything else. Then rinse with running water to remove all the salt. Pat dry with paper towels.
- In a large mixing bowl, combine tomatoes, scallions, avocado, bell pepper, parsley, mint, cilantro, and cucumber.
- In a small mixing bowl, whisk together the garlic, lemon juice, and olive oil. Season to taste with salt & pepper. Pour dressing over the vegetables. Toss around to coat evenly.
- Garnish with feta cheese.
