If you’re looking for a healthy and tasty breakfast/brunch recipe, this is for you! Make this for yourself, your friends, your family, or maybe your significant other – – and you will surely impress.
Here is my favorite protein pancake recipe:
Ingredients:
1 cup uncooked whole-grain oats (non-instant)
6 egg whites
1 cup fat-free cottage cheese
1/4 tsp vanilla extract
1/4 tsp ground cinnamon
2 packets sugar substitute
Directions:
In a blender, combine all the ingredients until smooth. Pour batter onto coated hot nonstick skillet. Cook pancake until bubbly on top and dry around the edges. Flip the pancake and cook the other side until golden brown.
Jacqui’s Touch:
I personally love drizzling fresh, local honey on top of my pancakes when serving. (My favorite honey ever is from Moon Valley Organics. They are based in Washington.) I also love to add fresh berries. As you can see in the above picture of the pancakes I cook, I use a smiley face griddle. Maybe you would have guessed that from what you’ve gathered about me via this website & social media – – I love happiness, positivity and eating healthy – – so why not combine all three 🙂
